Spicy Sri Lankan Shrimp Stir-Fry

Ingredients:

1/2 lb large shrimp, peeled and deveined
1 tbsp cornstarch
1 tbsp vegetable oil
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 large onion, thinly sliced
2 cloves garlic, minced
1 tbsp grated ginger
1 tsp soy sauce
1 tsp rice vinegar
1/2 tsp brown sugar
1/2 tsp Ceylon Red Chili Powder (adjust to your preference)
1/4 cup chopped fresh basil
Cooked rice, for serving

Method:

Toss the shrimp with cornstarch in a bowl.

Heat oil in a large skillet or wok over high heat. Add the shrimp and cook for 2-3 minutes per side, or until pink and opaque. Remove from the pan and set aside.

Add the bell peppers and onion to the pan and cook for 3-4 minutes, or until softened and slightly browned.

Stir in garlic and ginger, cook for an additional minute until fragrant.

Add soy sauce, rice vinegar, brown sugar, and Ceylon Red Chili Powder. Stir to combine.

Return the cooked shrimp to the pan and toss with the sauce.

Stir in chopped basil and cook for another minute.

Serve immediately over cooked rice.
